As well as a BSc in Biochemistry and Masters degree in Malting and Brewing Technology, he is a Master Brewer of the Institute of Brewing, and an MBA (Master of Business Administration) .With over 20 years experience in the Brewing Industry, as a Production Manager within large breweries (Raw Materials, Brewing, Fermentation, Maturation, Filtration, Bottling, Canning, Kegging, Cask, Tanker, Automation, Industrial Relations, Training, Business Systems, Projects, Planning) as the operator of a microbrewery, as the main contractor in many business start ups in this sector, and a registered Publican. The business is based around Brewing, Engineering and Business Consultancy. It has the facilities and resources to build brewing equipment in Stainless Steel, then deliver, install, commission and train the new owners in the operation of the plant and the Business. The core product range consists of 18 gallon (100 litre) pilot breweries, 2.5 barrel (400 litre), 5 Barrel (800 litre), 10 Barrel (1600 litre) breweries, cask washing machines, spares, training and Business Consultancy. The commercial brewing systems could be described as professional equipment that has been reduced to a small scale, as opposed to home brew equipment that has been enlarged. 2.5 Barrel Commercial Breweries

            A Popular 4 vessel system consisting of a Mash Tank (Hybrid Mash Tun), Combined HLT, Copper and Hopback, 2 Fermentation 2.5 Brl Microbreweryvessels, pump/pipe unit, plate heat exchanger, refrigeration unit and manual. The standard system is based on re-engineered 304 grade stainless steel hygienic vessels of 400 litre capacity, with refurbished and new ancillary equipment. As supplied the unit can produce 350 to 400 litres of Beer per batch, depending on Strength (abv), and can be operated twice per week. It can be operated more often by the purchase of additional fermentation vessels. The standard unit is called "entry level" and is a cost effective way of entering the market. This is the most popular type of plant and over 30 have been delivered, in the UK and overseas. The service requirements are 220v single phase 60 amp Domestic electricity (gas is an option) and 22mm mains water supply or cold water storage tanks.. Minimum floor area needed is about 8 square metres. Available in either gantry or single level formats. Embellished models can be supplied on request. Every brewery comes with a comprehensive manual and shopping list.

5 Barrel Commercial Breweries

5 barrel microbrewery            A 5 vessel system consisting of a Hot Liquor Tank, Mash Tank, Combined Copper and Hopback, 2 Fermentation vessels all based on re-engineered 800 litre 304 grade stainless steel, hygienic vessels, pump/pipe unit, plate heat exchanger, refrigeration unit and manual. Again using a mixture of new and refurbished ancilliary equipment. The unit can produce about 600 to 800 litres per batch depending on abv and can be operated twice per week, or more often with additional FV’s. Services requirements are single phase or 3 phase electricity or gas, 22mm mains water supply or cold water storage tanks, floor area in excess of 10 square metres.

  Larger Commercial Breweries

18 Gallon Pilot Breweries

Mark 1 version of Pilot Brewery            The 18 gallon pilot Brewery is designed with the keen home brewer or small brew pub in mind. It has a brewlength of about 100 litres, meaning that 2 firkins can be made per batch. It consists of a 3 vessel brewhouse, pump and heat exchanger mounted in a corrosion resistant galvanised steel frame, and 2*50L polypropylene FV's. The Hot liquor tank, and Copper are made of 304 grade stainless steel and fitted with electric immersion heaters. The Mash vessel is fitted with a false bottom, and is all 304 stainless steel construction. It has a novel tilting grains discharge mechanism. The product contact parts of the pump and heat exchanger are also stainless steel. The frame is designed to fit through conventional doorways for ease of delivery and installation. Extensive Manual included. Additional fermentation vessels in stainless steel or polypropylene can be supplied as an extra. Approx dimensions; H1900mm (H1200mm on delivery), W1220mm, D600mm.   Cask Washing Machines

            Probably the most important but least glamourous part of the process is washing the barrels. The MB101 is a low cost machine that can do this important function, and is designed for the light duty use found in microbreweries. It uses a spinning cleaning head to clean all the internal surfaces of a container (which cannot be done with a standard power washer). An automatic sequence unit controls the delivery of water and detergent via a pump, which also sends the effluent to the drain. The unit is manually loaded, is semi mobile and requires a water supply (hot or cold), drainage and 220v ac 5amp electricity. More elaborate, Heavy Duty, units can be built to special order.

Bio-Fuel

            No one can have failed to hear the news about Global warming and the search for alternative energy sources. Many governments, especially in the European Union have given an undertaking to replace 10% of fuel use with renewable sources. One such area is the development of Biofuels such as Bio-diesel and Bio-Ethanol. Some pilot projects could well be funded by grant aid. With modification Mossbrew Brewing Systems can be used for pilot experiments to produce Bio-ethanol, which can be used as a petrol substitute. Of course at a later date the plant can revert to beer manufacture. The technology is not new, but the drive for this process is new.

Manual, Retainer and Presales Advice.

          Several clients have indicated that they wish to pay for feasibility studies, help and other advice before committing themselves to a major equipment purchase. As a business it is often difficult to provide advice until it has been paid for, especially if the advice is lengthy and time consuming. We offer several datasheets as free presales advice, eg FAQ Microbrewery.doc, proforma invoices, terms of business and written specifications and site plans. For more detailed services several clients have opted to purchase the brewing manual in advance of a large order, and have received a credit to that value when a plant has been ordered. Once a client has "come on the books" further email detailed advice is forthcoming. Similarly clients requiring advice on full scale industrial breweries can purchase a retainer for detailed work. Camra Prize certificate awarded to a 2.5brl brewery Customer            When starting a new business, it is important to take advice from several sources, which you can choose to ignore or listen to. The starting point is a simple business plan, in which you make some basic calculations about your idea. You will then get a feel if the business idea is attractive, and will then perhaps look at more detailed figures and ideas. Graham Moss can help you in this more detailed stage, but for now, here are some basic figures to help you, based on brewing in the UK.

Graham's Technical Paper, The Brewer, feb 1992            One barrel of beer is 288 pints, 36 gallons or 163 litres. A Firkin is a 9 gallon container of beer (1/4 barrel). For a 4.5% abv (alcohol by volume) beer, the cost of the raw materials; water, malt, hops, detergents, power etc for 1 barrel is about £18. The 2002 UK excise duty on 1 barrel at 4.5% abv is £44, for microbrewers. So the cost excluding overheads is about £62 per barrel or 22p per pint. The overheads are wages, advertising and marketing, transport, wastage and property costs, and are controlled by the business operator.

            For many customers, eg pubs; the premises, wages and transport are already paid for, brewing or not, hence the attractiveness of the 2.5 barrel brewery. For other customers, the overhead costs need to be paid out of sales of the beer, so larger plants may be more suitable. Of course it is a commercial world and success of any business venture is not automatic, hence seeking varied advice is stressed.
